Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 can crushed tomatoes
  • 1 cup water or seafood broth
  • 1 pound white fish cod, haddock, cut into chunks
  • 1 pound shrimp peeled and deveined
  • Salt and black pepper
  • Fresh parsley chopped

Method
 

  1. Heat olive oil in a wide pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and oregano; cook briefly.
  4. Stir in tomatoes and water. Simmer for 20 minutes.
  5. Add fish and shrimp to the pot.
  6. Cover and cook gently for 5–7 minutes until seafood is just cooked.
  7. Season with salt and pepper.
  8. Finish with parsley before serving.
