Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion sliced
  • 3 cloves garlic minced
  • 1 can crushed tomatoes
  • 1 cup water or seafood broth
  • pounds cleaned calamari sliced into rings
  • Salt and black pepper
  • Cooked rice for serving
  • Fresh parsley chopped

Method
 

  1. Heat olive oil in a wide pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook briefly.
  4. Stir in tomatoes and water. Bring to a simmer.
  5. Add calamari, season lightly with salt and pepper.
  6. Cover and simmer gently for 35–40 minutes until tender.
  7. Taste and adjust seasoning.
  8. Serve over rice and finish with parsley.

Notes

Simmering keeps the calamari tender. If it feels firm, continue cooking gently until it softens.
