Beef and Tomato Stew

Ingredients
  

  • 2 pounds beef chuck cut into chunks
  • 2 tablespoons olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 can crushed tomatoes
  • 2 cups water or beef broth
  • 1 teaspoon dried thyme
  • Salt and black pepper

Method
 

  1. Heat olive oil in a heavy pot over medium heat.
  2. Brown beef in batches; remove and set aside.
  3. Add onion and cook until softened. Add garlic briefly.
  4. Return beef to pot. Add tomatoes, broth, thyme, salt, and pepper.
  5. Bring to a simmer, cover, and cook gently for 1½–2 hours until tender.
  6. Adjust seasoning before serving.
